Farina & More Italian Restaurant, Pizza, Bakery and Coffee Mood

Farina & More – Pizza, Bakery & Coffee Mood…

We at Farina & More believe in natural & authentic taste.

We believe in the simplicity of our ingredients, carefully sourced & picked directly from Italy.

Our dough has been developed after years of studies and experience and contains 80% of water.

We combine mother yeast with normal yeast to obtain a fragrant and tasty dough.

But we believe that time is actually our best ingredient… we use the ‘cold’ technique which, with a ripening of the dough lasting up to 72 hours, allows our pizza to be light, crispy and very digestible.

A place designed and created for Sergio Maglione – of Toto Restaurant and Toto Pizza by the metre fame – to show off his genuine Italian street food, homemade pasta and Napolitano wood fired pizza in funky modern surroundings.

Sergio Maglione has won numerous awards since opening Farina in 2014.

Frequent diners say they could be in Italy or even New York.

Brilliant for lunch, all pasta is made in house which means cooking time is quick.

Pizza takes a minute and a half to cook so it is very easy to slip in and out during your lunch break or stay and enjoy the list of Italian inspired cocktails and full menu.

Now the two old friends and former roommates have come together to open Via Farina, a neo-Italian pizza and pasta spot on the corner of Omaha’s historic Little Italy neighborhood adjacent to the new home of the Blue Barn Theatre, at 10th and Pacific Streets.

I get why people are already making themselves at home, what with the vibrant, chic atmosphere; pasta and pizza made with the right amount of sophistication; and a wine list where every bottle sits at just $30.

At Via Farina, in tandem with chef de cuisine Piero Cotrina, a Boiler Room alum with a passion for pasta, he has dialed the difficulty back a notch, and while the pizzas and pastas are thoughtfully assembled and classic Italian, the whole shebang is also approachable and affordable.

He suspected there’d be success in wood-fired pizza — a handful of Omaha restaurants, including Dante Ristorante, had already paved the way — but the neighborhood was untested when it comes to modern cuisine, and he planned smaller portion sizes than many are used to.

Via Farina Address: 1108 S. 10th St. Hours: Monday, 5 to 11 p.m.; Tuesday through Saturday, 11 a.m. to 11 p.m.; Sunday, 11 a.m. to 8 p.m. Hits: A shaved Brussels sprouts salad had wonderful texture and varied flavor; the rigatoni pasta is simply terrific; and don’t miss one of the restaurant’s signature pizzas, the singular fritti, with fried crust.

Its executive chef is Emanuele Tagliarina, who previously worked at Santa Maria, one of the top pizzerias in London and a pioneer in the capital in Neapolitan style pizza.

The pizzas here are cooked in just a minute, and many of the toppings are imported from Italy.

We tried two pizzas, one a Diavola and the other one with custom toppings.

The style of pizza of this chef involves very thin dough without much hydrated dough, which can look under-cooked in appearance.

The toppings were generous and both pizzas were excellent (easily 13/20), up there with some of the better ones in London.

In my Between Meals blog in March, I wrote about a reader who questioned the hefty price tag at Farina, the Ligurian-inspired restaurant in the Mission.

The Uccelletto-style veal ($36) resembled a stir-fry, with paper-thin slices of meat mixed with browned creamy potatoes and loads of braised artichokes and greens in a meaty sauce.
