In creating his menu for Indigo, Executive Chef Dominic Teague brings a culinary expertise that bridges respect for British tradition with gentle invention.

He is committed to careful sourcing and his menu includes an array of foraged foods and forgotten flavours.

As Executive Chef at One Aldwych for three years, Dominic has brought culinary expertise to the hotel.

With the recent refurbishment of the Indigo kitchen, he has quietly cut both gluten and dairy completely from his lunch and dinner menus, and diners haven’t been able to tell the difference.

Signature mains are delicate and bursting with flavour, including organic Rhug Estate lamb rump with samphire, smoked aubergine and capers and filet of Brixham brill, with Chantenay carrots, confit king oyster mushroom and red wine jus.

Launched in September 2016 in partnership with the three-Michelin-starred Chef, Eneko Atxa,showcases a modern take on traditional Basque food, with playful dishes and decadent desserts, in stylish surroundings and an informal atmosphere.

Guests can also enjoy the restaurant’s wine bar, which offers a carefully crafted Spanish wine list, including four White wines from Eneko’s family winery.

But from the first bite of our starters, I had absolutely no reason to question Eneko Atxa’s cooking.

My grilled langoustine with bacon sauce and herb emulsion may have been perhaps a little on the small side, but its cooking and flavour couldn’t be faulted.

Freshly whipped sheep’s milk ice creams, Errezil apple mousse pots, white chocolate and passion fruit tartlets, cappuccino cheesecakes, raspberry macarons with basil ganache and golden apples with a peach sponge – these were just a few of the deserts on offer.

Each dessert is also served with a pot of that heavenly ice cream on the side.

We were pleasantly surprised by Eneko’s cooking and also just how good value for money it was, with not only a well-priced a la carte menu, but even set-menus – perfect for pre-theatre goers.

I was excited, then, to see, that last summer Eneko opened in London at One Aldwych hotel, a transplant outpost of one of the region’s leading chefs, Eneko Atxa, whose restaurant, Azurmendi, outside Bilbao, has three Michelin stars and is No. 16 on the World’s 50 Best Restaurants List.

Kostas told me that he had wanted to bring something new and interesting to London and had found, in Eneko Atxa, a cutting edge chef who was excited to play with a less formal approach to his cuisine in a new location.

‘We started talking a year ago about dishes,’ Kostas explained, as he ordered me the cod tripe stew to try.

He admitted that translating Basque food to a London menu had been a challenge.

Elsewhere Basque ingredients like guernika peppers, corn talo (a kind of maize flat bread-taco) and txistorro, a spicy red sausage, appear to enliven standard restaurant dishes.

Eneko | Basque Kitchen Bar The Basque Country has the most Michelin-starred restaurants per-capita in the world.

And in a not-entirely-unrelated fact, they also have the most Basque restaurants per-capita in the world.

It’s from Eneko Atxa, who – not content with running a world top 20 restaurant; three Michelin-starred, Bilbao-based Azurmendi – is now behind Eneko, neatly slotting it into the ultra-luxe One Aldwych hotel.

Still, there’s reason at the five-star One Aldwych to press on: new dining room Eneko is a partnership with Eneko Atxa, the chef behind three times michelin-starred Azurmendi, number 16 on the World's 50 Best Restaurants list.

Mains follow the same line: slow-cooked oxtail with mushroom emulsion is a dense little beast, a dark strip that looks little but tastes big.

We scoffed at the idea of one sweet wine to suit all the different puds on the list and were promptly and happily put in our place – it tastes clean, isn’t sticky with sugar, and went with our gluttony perfectly.

Eneko suffers from the crushing weight of expectations: the 16th best restaurant in the world marlarkey written at the top is practically an obligatory mention for anyone talking about this place.

As a note, its lengthy soft-opening saw plenty of changes take place: if Eneko continues to improve and refine over the coming months, it stands a chance to be spoken of on its own terms, and not just as the little sister of Azurmendi.

And at Eneko, a spacious Basque eatery at One Aldywch hotel it is exceptional.

This is the first London joint from Eneko Atxa, whose Azurmendi restaurant near Bilbao holds three Michelin stars.

The butter comes topped with black pepper and chives, squidged together in a mortar so it’s edged with a verdant slick: you can then pile it on to good sourdough.

The Txerri Boda Pork Festival (in a pig’s head-shaped box) was the better, featuring a tiny, tasty milk roll stuffed with crumbly chorizo; but the Memories of Bay of Biscay (ooooh, dry ice!)

A main of confit pork cheek with earthy ham duxelle was better, pinging fresh notes afforded by a few fried shallots.
