IPPUDO London Review - Shiromaru Special - Le Captain Foodie

Review analysis

IPPUDO Ramen is a famous ramen restaurant established in Fukuoka in 1985.

IPPUDO London offers a wide range of choices when it comes to Ramen, from the original Tonkotsu to a vegetarian broth option.

The main attraction at IPPUDO London is their famous Hakata style tonkotsu pork broth.

It is frustrating because i really enjoy IPPUDO’s Ramen and they could really become THE place to go for a perfect Tonkotsu in London.

(A reminder that Ramen is without a doubt a meal that should be enjoyed quickly in order to be truly appreciated) Pork: First of all, the amount of extra slices served with the Shiromaru Special is quite consequent, you won’t feel disappointed if you love Chashu as much as i do.

Ippudo specialises in Tonkotsu ramen, which was originally an affordable fast food for workers at fish markets.

2008 saw the opening of the first overseas Ippudo ramen restaurant in New York.

Hirata Pork Buns are stuffed with Ippudo’s signature Chashu pork.

Shiromaru Classic is the original noodle dish offering tonkotsu pork broth with thin noodles, with an array of toppings including chashu, kikurage mushrooms, bean sprouts, bamboo shoots and a vibrant helping of spring onions for both flavour and aesthetics.

My guest chose Niku Ton Ontama which offered the Ippudo broth with thinly sliced pork and a poached egg to enrich the already rich broth.

The group also operates restaurants, where the Hakata-style ramen dishes were developed, in Japan, Sydney, Singapore, Hong Kong and Manhattan.

Signature ramen dishes such as the ‘Shiromaru Classic’ (a traditional pork-based broth ramen), and ‘Akamaru Modern’ (a richer broth, seasoned with garlic oil and Ippudo’s secret recipe miso paste) will form the basis of the menu, with vegetarian versions also available, made with seaweed and mushroom broth.

Unusual offerings such as the Ippudo Caesar Salad will be available, comprising a traditional Caesar salad topped with the restaurant’s homemade salted pork.

The group’s UK expansion began in December 2014, when the group received 2bn yen (£10.5m) from Cool Japan Fund, a Japanese government entrepreneurial fund to strengthen its pipeline of European restaurants Ippudo was founded in 1985 as an independent ramen restaurant in Fukuoka, Japan, by Shigemi Kawahara.

It now operates more than 120 restaurants in 13 countries, serving more than 50,000 bowls of ramen each day.

ES Food Newsletter Following an Evening Standard-Google panel debate about the possibility of achieving “a tech-life balance” we bounce into a lively-looking new ramen restaurant approximately 15 metres from the tech giant in the sparkling St Giles Piazza development and I am asked for my number.

A short, sharp menu first explains the Japanese concept of ramen: “a microcosmos in a bowl”, the basic broth for which “is derived from the essence of pork, chicken, beef or seafood, and seasoned with soy sauce, salt, miso and other important ingredients, etc”.

Not being seasoned sake drinkers we are advised to start light, choosing a sparkling one (£21) — all the rage dontchaknow — which comes with its own special pouring ritual.

Come for a bolstering bowl of ramen, wash it down with a mug of sake and be off again — and don’t forget to smile when the chorus starts up again as you leave.

Ippudo, a super-slick international ramen chain, has around 120 restaurants with branches in New York, Hong Kong, Singapore, Sydney, Tokyo and across Japan.

This is the Japanese company’s first foray into Europe.

For added oomph, order it with a dollop of spicy miso paste and a dash of black garlic oil (in the variant called Akamaru Modern).

Here you’re spoilt for non-ramen choice, with dishes such as black cod with miso, seared Wagyu beef or deep-fried chicken.

God knows how they got so much flavour into such a simple dish.

Ippudo Villiers Street | Restaurants in Charing Cross, London

Since opening its first store in Japan in 1985, IPPUDO has always remained true to its goal of sharing the best of authentic Japanese gastronomy through an all-around dining experience.

Specialized in pork broth tonkotsu ramen, IPPUDO has now over 240 stores located over 13 countries.

Everywhere, the mission remains the same: to spread 'smile' and 'Arigatou' through bowls of ramen.

In a cosy and welcoming ambience, IPPUDO Villiers Street showcase the top classical Tonkotsu ramen and a multitude of Japan-inspired appetizers.

Busy lunchers can now order takeaways, and diners can choose from a cosy dining area in the back or counter seats where, right in front of customers, chefs dynamically and energetically prepare the bowls of ramen.
