In 2003, Beth Coventry set about applying her talents to this renowned Hampstead pub restaurant The Wells Tavern, peeling back and revealing its classic Georgian façade.

Tables and sofas fill the traditional bar on the ground floor, where real ales are on tap and the menu includes plates of chorizo with red pepper and gherkins, cod fishcakes, the Wells classic burgers and a few flashier dishes like grilled tuna steak with peperonata and deep-fried polenta.

To start, try smoked chicken and avocado salad or grilled squid with coriander, lime and chilli salsa before slow-cooked lamb shank with parsnip mash and green beans or sea bass with shredded vegetables, pak choi, sesame and ginger dressing.

The wine list is for connoisseurs, but keeps its prices well in hand; plenty come by the glass and it's also worth peeking into the reserve cellar of vintage classics.

The Wells is the pub and restaurant you’ve always been looking for.

The Wells has won awards for it’s cooking and has offered Hampstead and beyond the chance to eat imaginative, seasonal, alluring, ever-changing dishes in seductive surroundings.

The Wells has an outside terrace that is a sun trap in the summer and which is kept dry and warm through the seasons with heaters and large canopies.

He laid jatoba wood floorboards (a real statement of intent) and gave the place a lick of paint before reopening the elegant Georgian building as a bar/restaurant.

I'm always wary of warm onion tart (even if it does come with Mrs Kirkham's Lancashire and golden purslane for £6.25).

But this offering had thin pastry that still managed to flake, a sweet mess of buttery onion, and a soft, runny lining held together with a thin cheesy skin.

It reminded me of Adam Smith, who found a place in the Himalayas where they made pizza according to a cookbook.

The good folk of Hampstead could do with livening up a little.

Located on the leafy Well Walk, The Wells is a beautiful Georgian pub, found right on the door-step of Hampstead Heath.

The venue was a pretty run-down Hampstead boozer until relatively recently, but it was transformed into the stylish gastropubs NW3 residents know today back in the early 00s.

The emphasis is on quality food here though, with the Wells kitchen offering up gastropub staples, served elegantly.

If you’re after a top-end pub experience in Hampstead, the Wells could be the place for you.

Three handsome spaces, each with good acoustics and their own colour scheme and fireplace, make the Wells perfect for family occasions – accordingly, Sunday lunch is a hot ticket.

Perfectly grilled scallops came with crisp bacon, samphire and two fashionable pureés: shallot and rocket.

Piping-hot mains prepared with skill and exuberance followed swiftly: beautifully crisp-skinned sea bass on tender fennel, courgette, chorizo, green beans and red pepper with a precision-chopped provençale salsa; and swordfish on a terrific salad base of avocado, watercress, green beans, rocket, frisée and endive.

Both dishes were generous and full of colour, vigour and flavour.

Add solicitous service and well-chosen wines at friendly prices and the Wells is a winner.
