We’d agreed to allow the chef, Kentaro Torii, to serve dishes that he felt best showcased his style of Italian food.

Next, Carpaccio di Mare, a stunning plate which I believe is one of chef Kentaro Torri’s signature dishes.

Passionate about wine and beer, he’s clearly researched the portfolio on offer at Bella Cosa very carefully and throughout the meal offered some excellent pairings.

Bella Cosa make all their pasta in-house and our next dish was a great example of that.

The pre-dessert – a clementine carpaccio with campari jelly, lemon sorbet and prosecco foam was delicious and light, just citrussy enough to work as a perfect palate cleanser.

Pecorino Bio, a  natural white wine from the producer Alberto Tiberio from Abruzzo, had grassy and citrus notes and was a perfect match with a fantastic Sea Carpaccio – a stunningly presented plateful of the freshest mackerel, octopus, kingfish, prawn, anchovy, oscietra caviar, salmon roe and lemon purée.

A 5 cheese Ravioli ‘Mezzelune’ (half moon) with saffron sauce, Iberian pork cheek, beetroot purée and black winter truffle was a dish of beautifully balanced but contrasting savoury flavours with a hint of sweetness from the honeysuckle and tropical fruit notes of our white Verdicchio Dei Castelli di Jesi, Classico Superiore (Verdicchio 100%), Marchetti.

The Japanese are renowned for their desserts; white chocolate (soft ganache and powder), strawberries (compote, puree and fresh), green tea powder, candied rose petals was the perfect way to end the meal and give us a lift for the journey home.
