sushi (chirashi) in london – part 1 | gourmet traveller

Besides being one of my favourite complete meals in one bowl, the assortment of sashimi and plentiful sushi rice is a good gauge of both the quality (and variety) of fish served at an establishment, as well as the skill of the chef in preparing and seasoning rice.

The Chirashi lunch set at this tiny Marylebone restaurant specialising in modern sushi and Japanese tapas, came with a handful of edamame, miso soup, and a choice of a tempura or sashimi salad side (I opted for the former).

Apart from the usual suspects of maguro, salmon, yellowtail, there was also turbot, scallops, snapper, amaebi (sweet prawns), otoro (the prized, fattiest cut of tuna belly), unagi, salmon roe, omelette, and my absolute favourite – gloriously creamy uni (sea urchin).

No matter what the selection, the sashimi resting on the tasty sushi rice (it is scattered with marinated shiitake mushrooms and nori) is always abundant, and of great quality.

The sashimi was exceedingly fresh (they get their fish from the same suppliers as Umu) – a small piece each of mackerel, salmon, scallop, swordfish, tuna, horse mackerel, yellowtail, turbot, amaebi and sardine, as well as some salmon roe and artistically placed slivers of miyoga (a type of ginger), shredded shiso and nira (garlic chives).

Nobu, yes.

In London, you can’t talk sushi without Nobu Matsuhisa.

He has been the godfather of Japanese restaurant industry here.

Try imagining “sushi” that is not always raw and sushi rolls that contain either something spicy, mayonnaise-y or avocado-y.

Even though both of the Nobu’s in London have lost Michelin stars, they are still buzzy, aspirational venues that many would like to have a taste of — or be seen at.

Like many of the venues around the Japanese Embassy, Ikeda is old school.

The highlight is a ringside seat by the tiny open kitchen, where sparklingly fresh sashimi, light, crisp tempura and numerous other classic dishes are produced.

Leaner-than-average slow-simmered pork belly with Japanese mustard and boiled, rolled spinach (buta kakuni) yielded easily at the prod of a chopstick.

More unusual was a prawn tempura dish, where the shellfish was rolled with cha soba noodles in nori before getting a second dipping in the batter and oil.

But consistency is the order of the day here, so come in the sure knowledge that you’ll get a decent meal.
