Thinly slice the chicken and coat in the chipotle sauce.

Put a spoonful of the chicken mixture on the tortilla and layer up with roasted peppers, spring onion, cheese and coriander.

Fold the tortilla wrap in half and brush lightly with olive oil.

Heat a pan and griddle both sides on a moderate heat on both sides until the cheese is melted and the filling is oozy.

In all honesty, I’d never been to a Wahaca, although friends love the UK chain for its reasonably-priced food.

Well, on stepping into the new Wahaca Test Kitchen just near Old Street tube station I realised I had actually been there before.

Looking for something a little meatier to get our teeth into, we rounded our food fiesta off with a wedge of grilled sea bream and a super-charged salad, sauced with avocado and feta.

While devouring the spread of tasty tapas – no rice or beans in sight – we continued rolling with the delicious margaritas.

The whole concept of the Wahaca Test Kitchen is to experiment with new dishes, with the view of introducing them to other restaurants.

In a nutshell: Wahaca tests new dishes on the public Summing it all up: If you know the Wahaca menu like the back of your hand, then get down to Shoreditch where you can be the first to try, and rate brand new concoctions from the Mexican chain, before they get rolled out nationwide, or send back to the drawing room.

If you’ve chomped your way through every item on the Wahaca menu a billion times, or close enough, then you’ll want to be getting yourself down to Tabernacle Street shortly when their new test kitchen opens.

That’s because there’ll be loads of new dishes for diehard fans to try, on a menu that'll change seasonally, while still retaining plenty of Wahaca's classic dishes for the less adventurous in your party.

Similarly to Wagamama’s recently launched test kitchen, the new Wahaca will “act as an innovation platform to develop new ideas and recipes” - essentially a test platform - before rolling them out nationwide.

Wahaca, the Mexican restaurant group, aims for the new East London restaurant to act as an innovation platform to develop new ideas and recipes with the ambition of taking many of the dishes created to its restaurants nationwide.

Founded by Tommi Miers and Mark Selby in 2007, dishes at the new test kitchen will draw inspiration from Tommi’s recent trips to Mexico City, Oaxaca and the Yucatan.

As well as continuing to feature Wahaca classics such as the iconic Pork pibil tacos, Tommi and the team have developed a whole host of new dishes, including Blackened cauliflower tacos with cashew nut mole and Market Boards for sharing, including Whole roast sea bream with al ajillo butter kohlrabi slaw.

Miers said: “Wahaca has always been at the forefront of innovation, bringing new Mexican dishes to the UK, and after ten years we’re hugely excited to have this new Test Kitchen to help us continue to push the boundaries and find new ways to explore the incredible variety of vibrant flavours and ingredients from Mexico’s extraordinary range of cuisines.”

Beyond the architecture and interiors, the brand itself has been refreshed for Shoreditch’s Wahaca Test Kitchen, going back to the inspiration of contemporary Mexican creativity and culture, and paying homage to the nation’s imagery, including bright colours and traditional symbols.
