OXBO & The Distillery - Dexter Moren Associates

Working in conjunction with Twenty2Degrees as lead interior designers for the flagship Hilton London Bankside hotel, we have designed a destination bar and restaurant within the hotel’s ground floor public areas.

Both the bar and restaurant benefit from direct access to the newly pedestrianised Price’s street, making a direct visual connection at street level- to attract guests and locals alike.

OXBO is a destination all-day dining restaurant working from day to night serving a breakfast buffet for hotel guests and an a la carte menu during the day and evening.

The Distillery is an artisan bar, specialising in local craft beers and over 50 hand-picked gins.

Executive Chef Paul Bates leads the team in the open kitchen at OXBO Bankside and after the success of the Bottomless Sunday Roasts popular with families and older guests, the restaurant launched their Bottomless Brunch earlier this year to appeal to a younger crowd.

The OXBO Bankside delicious brunch menu includes an extensive choice of fresh market salads, fish, meat and vegetarian dishes, served from the chef’s Traders Tables, where guests are invited to help themselves to as many of the starters and desserts as they fancy.

The starters Traders Table have a wide range of options for meat lovers and vegetarians – we noted plenty of delicious salad options in addition to palm heart and avocado ceviche and yuzu marinated tofu.

Available every Saturday, the Bottomless Brunch also includes a live waffle and egg station hosted OXBO’s open kitchen where the Chef’s team rustle up variety of freshly prepared classic dishes including Eggs Your Way (boiled, poached or scrambled), Eggs Benedict, Eggs Royal with smoked salmon, and Three Egg Omelette with fillings ranging from ham and tomato to mushroom.

The fish was firm in texture and full of flavour with the addition of the clams and mussels adding another layer to delight the taste buds, The vegetarian option was a delicious sounding tortellini but due to a gluten intolerance the chef kindly prepared a special third dish for us created on the spot from stir fried tofu, crisp broccoli and meltingly soft sweet potato.

The Distillery is Bankside's destination Bar, where hotel guests, local business people and residents choose to enjoy great bites and excellent drinks in a vibrant, engaging and sophisticated setting, no matter what time of day.

Located on the site of Stevenson & Howell’s Standard Works, a renowned essence factory in 1800s, The Distillery pays homage to its heritage, serving a range of signature cocktails incorporating homemade aromatics, infusions and bitters.

The bar will also serve a range of sharing platters and bar snacks, prepared by the restaurant kitchen and served until late, such as Chickpea and Tahini hummus with warm garlic, Khobez bread and Five spice dusted crisp fried Pork belly with chili, lime and soy dressing.

In an area of London where weekends can feel empty to the point of desertion, the excuse of brunch is a good way to reel yourself into Southwark.

And when that brunch happens to be in the basement restaurant of the Hilton Bankside hotel, then even more reason to go sample the wares of a culinary team serving guests of one of the world’s premier hotel brands.OXBO Bankside is the modern, British dining room at the Hilton Bankside hotel and while the likes of calf’s liver, wagyu steak burgers and chicken and spiced shrimp Caesar salad all sound amazing, we’re here to eat and drink our way through the bottomless brunch.

Adopting a fairly traditional hotel restaurant look, OXBO is a smart, sleek affair where the polished wood, industrial iron, parquet floor and carpet mix together to create a classy kind of cosiness.Topping up on Prosecco while feasting on buffet food for two hours is a pretty good way to spend a Saturday morning, so before we even get down to the specifics, OXBO has us happy.

Sandwiching main courses of the likes of rich ravioli and slow-cooked beef between pre and post trips to the buffet spread, this is the type of bottomless brunch that could make even the most diehard fan of the fizz forget about all that endless Prosecco.Bowls of jumbo prawns, plates of pastrami, cured meats and broad beans meet further bowls of sliced salmon and swordfish sashimi, yuzu marinated tofu and barley couscous, with a whole lot more in between.

Yes because by the time dessert comes around, following the buffet, the egg and waffle station and the mains, we’ve suddenly found space to sample mini crème brulee, cheese cakes and alcoholic ice cream at the dessert buffet, setting us up to leave with swollen stomachs, happy in the knowledge that we gave the OXBO Bottomless brunch our best shot.The restaurant strikes a good balance between informal and refined, making it a good place to come for special occasions.

Succulent, juicy medium-rare meat is served along with crunchy pork crackling; enormous, chewy Yorkshires; exemplary, ultra-crispy duck fat roasties; a helping of assorted seasonal veg; and a large boat of deep-flavoured gravy made with juices caught from the grill.

Though you’ll find an exemplary roast whatever your meat of choice, the rare, thinly sliced (but not meanly portioned) sirloin of beef is worthy of particular praise.

It features confit pork belly (impressively crunchy crackling), beef (served medium-rare and richly-flavoured), chicken (moist-fleshed and rubbed with lemon and thyme), a chorizo scotch egg, four fluffy Yorkshires, sweet potato mash, buttery greens, an abundance of excellent fluffy and crisp roasties, and plenty of rich red wine gravy.
