But that's exactly what you'll find on Jason Neroni's dinner menu at the Rose Café: a plate of roasted sugar snap peas with a dollop of thick, white "lamb lardo" plopped in its center.

He wasn't the first to do these things, or even the first to do all of these things in one place, but when Superba Snack Bar opened with Neroni as chef in mid-2012, he showed a tremendous aptitude for the style that Superba, along with Gjelina and the Tasting Kitchen, embodied — a type of new Venice cuisine that felt vital.

It was a surprise when Neroni left Superba in the summer of 2014 to partner with Sprout restaurant group on a revamp of the Rose Café, just up the street.

As for Neroni, the Rose is more evidence of his talent as a chef, and not just the cooking part.

The Rose is a triumph of New Venice, and I'm not going to say whether that's a bad or good thing.

Justin Meddis discontinued the butcher shop that was his half of the operation, but his skills are still abundantly evident in the meats – pork in particular – that are frequently featured on sandwiches.

Other sandwiches that have turned up so far on Rose’s Asian-inflected menu include housemade five-spice sausage, banh mi with paté and Thai sausage, and roast beef with bibb lettuce, sweet mayo and plum sauce.

Katsu Sando, which piles Japanese-style panko-crusted pork cutlets, shredded cabbage and tonkatsu sauce between slices of light, subtly sweet milk bread, has been so popular that it has earned a more or less permanent spot in the rotation.

Under the Appetizer heading, you might find a spicy beef tendon salad with radishes, peanuts, mint and scallions; a steamed bun crammed with curry pork so tasty you’ll be forgiven if you dip sparingly in the accompanying chile oil; or pork and squash dumplings floating in a spicy garlic broth.

If ever there was a grownup version of a kid in a candy shop, it’s the feeling you’ll get when you’re looking at the display of Katie Meddis’ pastries at Rose’s Noodles, Dumplings Sweets in Durham.

It's that rarest of things, a genuine family affair, headed up by chef William Mills, the collective enthusiasm and pride every bit as dazzling as its blindingly white-with-jabs-of-colour decor.

A bestselling dish, "chip shop prawns", stars beautiful shellfish in a crunchy, distinctly chippie rather than tempura batter with a bracing frisson of vinegar.
